Steamed Eggs
Spencer has taken an interest in weight lifting and his enthusiasm is contagious. I have been looking for some quick snacks away from our regular sweets.
In college I learned that “hard boiled” eggs should actually never be boiled. It will make them tough and rubbery and give a green tinge to the yolk.
Last time I was home Mom steamed the eggs with great results. She could even peel her farm-fresh eggs which is usually impossible. I gave it a try for myself by putting my strainer over my stock pot. Just bring the water to a boil, place the steamer basket inside, and simmer for 25 minutes.
They were great!
I always go to the grocery store with good intentions but end up purchasing more produce than we eat. We always default to peanut butter sandwiches and granola bars. Today when I returned from the grocery store I washed and cut the produce to encourage snacking. The grapes, strawberries, and eggs make a great combination and ~200 calorie snack.
What suggestions do you have for encouraging Spencer’s new healthy habits?
Will definitely give the eggs a try! Cutting the produce is the only to make sure it gets eaten at our house. If it’s not cut for snacking, then it rots.
