Slow-Cooker Vegetarian Split Pea Soup
I’ve posted this recipe before, but thought I’d share it again. I’ve really been attracted to clean eating blogs lately. Must be the overload of velveeta and canned chili?
All of the beautiful pictures had me craving some soup. Lucky for me, I have all of the ingredients in my pantry for some vegetarian-split pea soup.
I like this soup because it is a healthy food that is easy on my budget too. I put mine in a slow-cooker so there is very little prep time involved. I can prepare eight meals for myself in the time it takes to prepare a package of Ramens.
In your slow cooker layer:
1- 1 lb bag of split peas
3 chopped carrots
3 ribs chopped celery (or however much you want to use up)
1 chopped onion
Whatever seasonings you like. I add garlic and parsley.
2 large vegetable boullion cubes
Pour seven cups of water over top. No need to mix. Set your slow cooker to “Low” for 6-8 hours or “High” for 4-5 hours.
And it’s ready for your thermos!
Last time I made it I added a turnip and sweet potato, which was gave it a sweet taste. I’ll use up the vegetables that I have on hand for now and keep that in mind for my next grocery trip.
