Simple Slow-Cooker Vegetarian Split Pea Soup
Fall is officially here in Iowa with blustery winds and temperatures in the 50’s projected for the rest of the week. Time to break out the soup recipes!
There’s nothing better than hot soup on a cold day except hot soup that’s waiting for you when you get home. I love to make split pea soup because it’s very filling, is a great source of protein, and is nearly as cheap as ramens. Sorry, no picture for this post. We all know that pea soup is not so pretty, but it tastes and smells so good! In a slow cooker, layer:
1- 1 lb bag of split peas
3 chopped carrots
3 ribs chopped celery (or however much you want to use up)
1 chopped onion
Whatever seasonings you like. I add garlic and parsley.
2 large vegetable boullion cubes
Pour seven cups of water over top. No need to mix. Set your slow cooker to “Low” for 6-8 hours or “High” for 4-5 hours.
