Quick and Thrifty Fish Dish
Good Morning! I wrote an email to my mom this morning that read a lot like a blog post. So I thought it was necessary to share it with you all:
Hi Mom!
I made this meal for Spencer and he loved it, so I made it for Mel’s visit yesterday.
I saute whatever vegetables I have in a big “hamburger” pan, a bag of frozen veggies works too.
After they are shiny I add 1/2 cup water.
I arrange the fish over the vegetables and sprinkle generously with salt and pepper. Last night I added lemon slices too.
I put the lid on and leave it until the fish flakes, about 8 minutes.
It looks really fancy, but takes only 10 minutes, 8 of which you ignore it for.
I thought you would really like it, because you like fast meals for Dad and it is very tasty but healthy.

Some clarifications:
Mom and I buy a great big box of fish from the local convenience store. He sells us 10 pounds for $22.50. He undercharged me at my last visit because I worked there in high school.
The white fish fillets are frozen individually so I can just grab however many I need to feed Spencer and me.
We swear by this fish- It is so tasty! It is not a cheap quality and stays together very nice.
A “hamburger pan” refers to a deep skillet. Mom uses hers to brown hamburger; I use mine for one-dish meals.
This makes for a very thrifty dish, especially if you use vegetables on sale or gleaned. It also looks very fancy. Spencer and I eat a lot of beans and rice, so this is our “fancy” meal of the week.
We tried it last night with some couscous it was wonderful!
