Pressure Cooker 365 Recipe #87: 15 Bean and Barley Stew

This 15 Bean and Barley Stew was an excellent meal for Derby Thursday. I used a packaged 15-bean mix, diced tomatoes with green chilis, and jarred minced garlic for convenience. I dumped everything in my pressure cooker, ran around like a mad woman getting ready for practice, and pulled the pressure cooker off the burner on my way out the door.  I was welcomed home from practice with this hearty stew waiting.

I hesitate to call it a stew because it is so thick. You could add more broth or water if you choose.

Pressure Cooker 15 Bean and Barley Stew

Prep Time: 2 minutes

Cook Time: 30 minutes

Total Time: 32 minutes

Pressure Cooker 15 Bean and Barley Stew

This stew recipe is perfect for a busy night with whole food convenience ingredients and minimal cleanup. Your pressure cooker has it ready in just 30 minutes.

Ingredients

  • 1 C 15-bean soup mix
  • 1/2 C pearled barley
  • 4 C water
  • 1 15-oz can diced tomatoes with chilis
  • 2 cloves garlic, minced
  • 1/2 t each salt, pepper, dried cilantro, and cumin

Instructions

  1. Pour all ingredients in pressure cooker.
  2. Cook at full pressure (15 lbs) for 25 minutes. Allow the pressure cooker to cool naturally.

Notes

This makes a very thick stew. Add more liquid if desired, but do not fill the pressure cooker more than half full.
