While browsing online for recipes I was happy to come across this one from Dad Cooks Dinner for refried beans. Although I had not planned ahead I believed I could start with dry beans and have refried beans within the hour. Better yet, I wouldn’t have to get groceries!
Apparently I did too well at cleaning out my pantry before the move. I was out of pinto beans! How can I run out of pinto beans?! I subbed in red beans. But then I couldn’t find garlic cloves or onions. Had I used them up too? A red onion and some jarred minced garlic worked fine. I used the very last of my bay leaves, too.
Even with all of my substitutions the beans turned out well. Great, even. Canned refried beans will never again find their way into my grocery cart.
On a side note…
I can’t stop raving about the chocolate lava cake I made this weekend! Please don’t make my mom’s mistake and overlook the recipe just because you don’t have ramekins. Check out my post about using scavenged accessories for the pressure cooker. Half-pint canning jars or tea cups will do just fine.
