Pressure Cooker 365 Recipe #67: Quick Sick Chicken Soup
In your pressure cooker pour 6 C chicken broth, 1/2 C frozen corn, 1/2 C frozen peas, and 1/2 C white rice. Cook at full pressure for 2 minutes, then remove from heat and allow pressure to drop naturally. Keep lid closed for at least 10 minutes.
Eat, drink, and feel better!
I’m on Day 5 of a terrible head/chest cold that is getting worse instead of better. I took a sick day Tuesday and one again today for a total of SIX days in one school year! I feel awful. (about the sick days… and awfully sick) My parents were highly skeptical of sickness. You had to be vomitting or have a fever to stay home. I remember TWO days coming off the bus to my dad’s truck in the driveway. One was when my little sister was born. Sick days just didn’t exist in my world.
I feel a little better that I am one of nine teachers out today. I have great co-workers who will help out. I am always quick to cover a class when someone else is out. But I still. Feel. Terrible.
Not to mention that my husband has handled most of the moving so far… Or that I’m missing my derby team’s big fundraiser…
