Pressure Cooker 365 Recipe #65: Beer Can Chicken
Apparently I am the last American to try beer-can chicken. It’s an interesting concept: You cook a chicken “sitting” upright on an open beer can. It sounded quirky enough to pique my interest.
I am under the weather today and in much need of hot, soothing liquids to help my chest expectorant do its job. (Cough, cough, hack!) Chicken noodle soup seems like the obvious choice but I’m settling for hot tea and this beer-can chicken. Now I have a carcass to make homemade chicken stock tomorrow. I have read rave reviews for homemade stock in the pressure cooker.
To make the chicken I followed this tutorial from Hip Pressure Cooking. The instructions are very detailed with step-by-step pictures. Mine did not look nearly as nice as that one, however. I could improve by using fresh herbs instead of dried and not skinning the chicken first.
Instead of pouring the reduced sauce over the chicken I tossed in a bag of frozen brussels sprouts and cooked them at full pressure for 2 minutes, releasing the pressure immediately.
The chicken sitting upright in my pressure cooker was a little creepy. :S Small price to pay for the delicious stock I will have tomorrow!
