Pressure Cooker 365 Recipe #63: Polenta
Not only can it be made in the pressure cooker, but it is better with easier clean up! I followed the instructions from Home Cooking in Montana with fantastic results. The polenta was smooth, creamy, and lump-free. The closed environment kept the polenta from being a bubbly mess. Ellie’s strategy of whisking the polenta into simmering water kept it from burning.
I ate my polenta with Parmesan cheese, fried egg, tomato, avocado, salt, and pepper. I will wait until August until I try another tomato but it was tasty overall. This is my new go-to way to make polenta!
