Pressure Cooker 365 Recipe #53: Potato Egg Smash
I was not going to share today’s (last night’s) recipe. I was going conveniently “forget” to blog. Pressure Cooker 365 doesn’t have to mean 365 consecutive days, right?
I came home from work (late) with 20 minutes before derby and no idea what to cook. I peeled and diced 2 potatoes and dropped them in the cooker with 1/2 C water. I started them cooking and figured I would know what to add by the time they were done.
After cooking at full pressure for 4 minutes I was still running around like mad. I tossed in some mushrooms, green peppers, and bacon grease and sauteed, hoping something great would happen. The crunchy breakfast potatoes I halfway hoped for were NOT going to happen so I shut off the stove and left for derby.
I resisted the temptation of picking up a pizza on the way home. I tasted what was left in the pressure cooker and it actually wasn’t terrible. So I turned the heat back up and let my mashed mess get a little browned. Then I pushed it all to one side and scrambled some eggs in the pot. I mixed it all together and called it a “Potato Egg Smash.”
We were both tired, cranky, and hungry so we happily ate it. It wasn’t fantastic, but it was decent and hit the spot.
So… no recipe to share today. Just another whine about my busy life! But, just for reference sake, I did use my pressure cooker.
As long as you are enjoying life that’s all that is important; when you get too busy and lose the joy, that’s when you need to worry. Eggs are one of my favorite rush meals.
I don’t have a pressure cooker. I’m reading your recipes to see if I should try one. I’ve always been afraid of the lid blowing off.
