Pressure Cooker 365 Recipe #45: Boston Baked Beans
On November 17, 2012 I married the love of my life and met a new love: My pressure cooker!
To spread the love I’m using my pressure cooker every day and sharing the recipes on my blog.
I’m working my way through my cabinet and these beans fit the bill. Depending on what produce you have available, celery would be a nice addition.
I used a tried-and-true pressure cooker recipe tonight: Pressure Cooked Boston Baked Beans by Lorna Sass. Sometimes I like to get creative and find new ways to make my old favorites. Some days I like to just follow a recipe and eat some good food. Today is a recipe day.
Instead of redoing the whole recipe I will point you in the direction of Lorna’s blog. The only change I made was to use a whole can of tomato paste instead of just 1/4 cup. I don’t know what the rest of the can would have been used for. I also used regular mustard instead of prepared.
Spencer and I ate these beans over baked potatoes. This probably wasn’t the best meal to eat while watching the season finale of The Walking Dead, but it was great nonetheless. We enjoyed having some time off from the craziness that is new home ownership.
