Pressure Cooker 365 Recipe #43: Tender-Crisp Broccoli

“I and mine” enjoyed an afternoon at Spencer’s parent’s home. The holiday festivities included a beautiful meal with ham, potatoes, bread, and broccoli. The broccoli, however delicious, was a happy accident.
We intended to make the kind of salad with broccoli, grapes, raisins, and sunflower seeds (what’s that called?) but found out we had no grapes, sunflower seeds, or sweetened condensed milk. The broccoli cooked up quickly and made a nice side dish.
- Put enough water in pressure cooker to cover bottom with 1/4″ water.
- Place desired vegetables in cooker. We had 1 head of broccoli with 1 chopped onion.
- Lock lid in place. Bring to full pressure. Cool immediately.
- Season with butter, salt, and pepper to taste.
P.S.: Were your eggs hard to peel today? Next year, steam them in your pressure cooker!
