Pressure Cooker 365 Recipe #40: Hobo Breakfast

To spread the love I’m using my pressure cooker every day and sharing the recipes on my blog.
Yesterday My mom and I ran an errand in Jesup, Iowa, and shopped at the Amish settlement near there. I got a new cookbook along with some other goodies. We love Amish cookbooks because the food is quick, simple, and delicious.
This is one of those meals. Originally called “Hobo Dinner;” it used hamburger and cooked for 20 minutes. I used pork sausage and made it in the pressure cooker. Now it makes a quick, simple, and delicious breakfast.
- 8 oz mild sage pork sausage
- 2 potatoes, sliced thin
- 2 oz mushrooms, sliced
- 1 small zuchinni, sliced
- Salt and pepper, to taste
- Form the sausage into two patties. Brown one side in pressure cooker with lid off over medium-high heat.
- Turn patties and pile vegetables over top. Lock lid in place. Cook at full pressure for 7 minutes. Release heat immediately.
