Pressure Cooker 365 Recipe #39: Easy-Peel Hard Cooked Eggs (Farm Fresh!)

My mom keeps a small flock of hens that lay the most beautiful golden-yolked eggs I’ve ever had. This afternoon I decided to try hard cooking some of the eggs that I picked earlier in the day. I’ve had good luck steaming eggs in the past and figured that pressure steaming couldn’t be any different.
Mom (who has had many a hard cooked egg) said it was the best hard cooked egg she had ever tasted! The outside was firm and smooth and the yolk was creamy.
Place your eggs in a steamer basket with one cup water. Lock lid in place and cook at full pressure for 6 minutes. Cool and release pressure immediately. Mom and I have cheap pressure cookers that only cook at 15 pounds pressure but we still had great results.
Mom has bought eggs from the grocery store to make deviled eggs because her fresh eggs are too hard to peel. Now she can enjoy hard-cooked eggs anytime.
