Monday Meal Plan- SPRING BREAK!
Hooray! It is here! I survived mid-term week!
My original no-meal-plan plan will not fly, as I am at Spencer’s the whole week. Mom and Dad abandoned me in favor of a mini-vacay to Minnesota. I’m a little jealous, but they deserve to get away. I know they love us, but they are adjusting VERY well to their growing-and-leaving-the-nest children.
So here’s the plan:
Monday: Spencer and I are going to dinner at my FAVORITE Mexican place, Las Margaritas, and will be buying groceries after. Have you ever heard the money-saving grocery shopping tip to not bring children? They tend to convince you to buy things you do not need like sugary cereal, individually packed pudding, and processed cookies. In this situation, Spencer is my four-year old. Here’s my list:
- Green Pepper
I’ll update you tomorrow to see how well we stick to this.
Wednesday: Chicken and dumplings with celery and carrots
Thursday: Chicken linguine Alfredo with spinach
Friday: Lasagna. No wait- Lent Friday. Make that grill cheese and gingered carrot soup.
Saturday: Pancakes and oranges.
And then I have to head back to work the night shift… and so ends Spring break.
Reminder to stock up on cabbage this week! Saint Patrick’s Day brings GREAT sales… HyVee has it at $.19/lb! Mom makes delicious kraut in March. At this price it is barely worth the space in your garden!
