Massaged Raw Kale Salad
I like to read about different diets: vegan, gluten free, raw food, etc. Each way of eating has different things to offer. For example; vegan sites have great recipes with no eggs. Raw food bloggers have great salad recipes.
Raw foodists believe that enzymes in food are destroyed when heated above 115 degrees Fahrenheit. They have all kinds of tricky ways to “cook” their food without actually heating. Raw kale does not sound appetizing, but adding salt and an acid gives it the texture of perfectly steamed greens.
Here is how I made my *delicious* salad:
- In a large bowl I tore one bunch of kale into bite-sized pieces.
- I added a splash of lemon juice, a drizzle of olive oil, and a generous sprinkle of salt. (Not sure on exact measurements…)
- I “massaged” the salad for about three minutes and let sit for another ten.
- I added an avocado, two Roma tomatoes, a red onion, and a green pepper.
I like this salad because it gets better the longer it sits instead of getting wilty like lettuce salads with dressing. I ate half for dinner last night and will be enjoying the other half for lunch today.
