Green Pepper Stuffing
My mom used to make these great stuffed green peppers. They were filled with rice, hamburger, and onions. I was hungry for someting tasty and thought I’d try my own version single-skillet style.
You will need:
1 small can of mushrooms
2 green peppers
1 26-oz can spaghetti sauce (I’m still eating through my stock of Hunts that I found for 99 cents each)
And some rice
Chop up the onion and peppers. Saute with mushrooms in large skillet with olive oil until tender. Add the spaghetti sauce. Fill the same can with water and add that as well. Bring to a boil. Fill the can up to the ridges with rice and stir in. Cover and simmer for about 20 minutes or until rice is tender.
You could add some hamburger at the beginning to make a more “complete” meal if you wish. I like to add shredded cheddar cheese before I microwave myself a serving to warm up the leftovers. If you were really ambitious you could actually use it to stuff some green peppers and bake them- that’s great too. Enjoy!
