“Empty” Jar Mexican Rice
Spencer and I enjoyed a great meal last night of fajitas, refried beans, and Mexican rice last night.
I especially impressed myself with the rice…
Usually I use 1 can diced tomatoes with chilies, 1 can water, and 1 can rice. Last night I had no tomatoes and was lacking spicy seasonings.
So, naturally, I improvised!
I had a crusty old almost-empty jar of taco sauce in my fridge that had seen better days. I measured 2 cups water into the jar, shook it up, and poured it into a saucepan. Then I added one cup rice. I brought the mixture to a boil and simmered for 20 minutes.
The result: Spicy rice! For only the cost of rice.
Diced tomatoes are not expensive. But why run to the grocery store to buy an ingredient you don’t need?
