With my garden winding down for the winter it was time to use up the last of my zucchini. Despite my best efforts (even featuring a week of zucchini recipes on my food blog) I still had some left over, and more than I could use fresh, so I froze it for later.
I apologize that I don’t remember where I read this idea. (Non-consumer Advocate? Patchwork times
?) I borrowed the food processor from work and shredded it up in no time. I then packed into 1-Cup measures, turned them out onto a baking sheet, and froze the little piles.
The piles froze solid and can be transferred to large freezer bags for long term storage. Now I can easily grab 1 cup of shredded zucchini whenever a recipe calls. For now I’m about zucchini-ed out for the year.
