Checking In | Roasted Chickpeas, Christmas Gifts
I am still alive and well in Iowa. Busy, busy, but still thrifty!
I am having a fantastic weekend and it’s 9:30 on Saturday.
Yesterday I picked the pattern for my standard Christmas gift: the Gaptastic Cowl. (Ravelry Link) I loved these last season but couldn’t bring myself to spend $30 on moss stitched acrylic. Last night I purchased several balls of thick, cushy acrylic (Charisma by Loops & Threads): on sale and with a 15% teacher discount; and got started. Spencer and I watched a few episodes of our favorite shows and I got halfway through the cowl for my brother’s girlfriend. The cowl is stitched in the round and is a simple seed stitch. This is my new “TV” knitting.
This morning I had an orange for breakfast and put the peel on the stovetop to simmer with some cinnamon sticks and nutmeg. Spencer will be disappointed when he doesn’t wake up to pumpkin pie- which is what my house smells like.
I made a trip down to farmer’s market where I purchased beautiful kale, fresh potatoes, and green peppers. I treated myself to my favorite gluten free-vegan snack: Scotcharoos!
I used up the chickpeas in my fridge to make roasted chickpeas- delicious! These seem to be all the rage on the food blogs so instead of sharing my process, I will point you in the direction of a few tutorials here.
Best part of all the cooking I did today: I cleaned my kitchen.
I’m off to work at double at the OG. I love my coworkers and am excited to share my snacks. I wish I loved serving as much as I love my work “family.”
