It’s week two of Christmas break and I’m wonderfully comfortable here at Spencer’s; crafting, reading, and watching Netflix movies. So comfortable, in fact, that I don’t want to leave. Not even to get groceries. And why should I? My library books aren’t due until next week.
It’s Purge the Pantry week. All of our meals will come from ingredients that I have on hand in the fridge, freezer, and cupboard. My modified menu is as follows:
Monday: Chili Cheese Mac
- I’ll add leftover chili to a box of macaroni and cheese to create one of our favorite dinners.
Tuesday: Linguine with Meat Sauce
- Pretty self-explanatory, canned sauce with ground beef. Last week when I made the chili I browned two pounds of hamburger with two onions. One portion was used for the chili and the other two portions went in the freezer. I’ll use one portion for this meal.
Wednesday: Baked Chicken with Rice
- Last week I made pork chops using this recipe from Hillbilly Housewife. I’ll use some chicken breasts from the freezer and a can of cream of mushroom soup to make something similar. I’ll use carrots and celery in place of peppers.
Thursday: French Toast with Bacon and Oranges
- I’ll use the obnoxious amount of flour in my pantry to make cinnamon bread for the french toast. Oranges will go great with this. They were on sale last week 6/$1, or 17 cents each.
Friday: Lunch at Las Margaritas!
- We’re celebrating the new year at our favorite Mexican restaurant. Spencer has the day off so we can take advantage of the great lunch deals. The crazy-big portions (even lunch sizes) will feed us all day.
Saturday: Grill Cheese with Tuna Helper
- Pretty self-explanatory…
Sunday: French Toast with Bacon and Oranges
- Once again. I’ll prepare brunch before I head off to spend a few days quilting with my mom and sister.
Lunches and snacks this week will be leftovers, yogurt, applesauce, and sandwiches. I’ll have coffee and oatmeal with raisins and walnuts for breakfast.
Not a very fancy menu, but practically free. Careful planning during the rest of the week even allows for a splurge on New Year’s.
